Description

Pineapple Christmas Balls are a festive, no-bake holiday treat combining creamy cream cheese and butter with sweet pineapple and shredded coconut. These bite-sized dessert balls are easy to prepare, require no baking, and are perfect for serving at holiday gatherings or as a sweet snack throughout the season.

Ingredients

Base Mixture

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 cup crushed pineapple, very well drained
  • 1 teaspoon vanilla extract
  • 2 1/2 cups sweetened shredded coconut
  • Pinch of salt
  • Additional shredded coconut for rolling

Instructions

  1. Prepare the Base: In a large bowl, beat the softened cream cheese and butter together until smooth and creamy to create a rich and velvety base.
  2. Add Sweetener: Gradually incorporate the powdered sugar, mixing continuously until the mixture is fully combined and fluffy, providing sweetness and structure.
  3. Mix in Flavorings: Gently stir in the very well drained crushed pineapple, vanilla extract, shredded coconut, and a pinch of salt until evenly distributed throughout the mixture.
  4. Chill the Mixture: Cover the bowl with the mixture and refrigerate for 1 to 2 hours, allowing the mixture to firm up enough to handle easily for rolling.
  5. Shape the Balls: Once chilled, scoop out tablespoon-sized portions and roll them into smooth, round balls using your hands.
  6. Coat with Coconut: Roll each formed ball in additional shredded coconut to coat completely, adding texture and a festive look.
  7. Store and Serve: Place the coated balls on a parchment-lined tray and refrigerate until ready to serve to keep them firm and fresh.

Notes

  • Ensure the crushed pineapple is drained extremely well to avoid the mixture becoming too soft and unworkable.
  • These pineapple Christmas balls can be made up to 3 days ahead and stored covered in the refrigerator to retain freshness.
