Base Mixture

- 3 cups powdered sugar
- 1 cup crushed pineapple, very well drained

- 2 1/2 cups sweetened shredded coconut
- Pinch of salt
- Additional shredded coconut for rolling
Instructions
- Prepare the Base: In a large bowl, beat the softened cream cheese and butter together until smooth and creamy to create a rich and velvety base.

- Chill the Mixture: Cover the bowl with the mixture and refrigerate for 1 to 2 hours, allowing the mixture to firm up enough to handle easily for rolling.
- Shape the Balls: Once chilled, scoop out tablespoon-sized portions and roll them into smooth, round balls using your hands.
- Coat with Coconut: Roll each formed ball in additional shredded coconut to coat completely, adding texture and a festive look.
- Store and Serve: Place the coated balls on a parchment-lined tray and refrigerate until ready to serve to keep them firm and fresh.
