Description

These Philly Cheesesteak Bell Pepper Bites are a delicious and low-carb twist on the classic sandwich. Bell peppers are filled with a savory mixture of beef, mushrooms, and cheese, then baked to perfection. They make a perfect appetizer for any gathering or a fun weeknight dinner option.

Ingredients

Bell Peppers:

  • 4 bell peppers (any color)

Filling:

  • 1 tbsp olive oil
  • 1 small yellow onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Topping:

  • 6 slices provolone cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare bell peppers: Cut the bell peppers into 2-inch wide pieces, remove seeds and ribs, and place them cut-side up on the baking sheet.
  3. Cook filling: In a skillet, cook onions and mushrooms until softened. Add beef and seasonings, cook until browned. Remove from heat.
  4. Fill peppers: Spoon beef mixture into each pepper piece, top with provolone cheese.
  5. Bake: Bake for 10–12 minutes until cheese melts and peppers are tender.
  6. Serve: Garnish with parsley if desired and serve warm.

Notes

  • For a low-carb meal, serve with a side salad or cauliflower rice.
  • You can prep the filling in advance and assemble just before baking.
