Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8-ounce) packages Philadelphia cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

For the Optional Topping:

  • Cherry, blueberry, or strawberry pie filling; or fresh fruit

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Make the Filling: Beat cream cheese until smooth. Add sugar, vanilla, eggs, sour cream, and flour. Pour over crust.
  4. Bake: Bake for 55–65 minutes until almost set. Cool in the oven for 1 hour.
  5. Chill: Refrigerate for at least 4 hours before serving. Top with fruit if desired.

Notes

  • To prevent cracks, use a water bath or add a pan of hot water in the oven. Cool gradually for the smoothest texture.
