Description

A delicious and easy-to-make Pesto Caprese Puff Pastry Pizza featuring a flaky puff pastry base topped with basil pesto, fresh mozzarella, juicy cherry tomatoes, and a drizzle of balsamic glaze. Perfect as an appetizer, lunch, or light dinner with fresh basil garnish adding a burst of flavor.

Ingredients

Base

  • 1 sheet puff pastry, thawed

Toppings

  • ¼ cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 6 oz fresh mozzarella, sliced or torn
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat Oven and Prepare Pastry: Preheat your oven to 400°F and line a baking sheet with parchment paper to prevent sticking. Unfold the puff pastry sheet onto the prepared baking sheet and gently roll it out to smooth any creases, forming a rectangle.
  2. Score and Dock Pastry: Using a knife, score a ½-inch border around the edges of the pastry sheet, being careful not to cut all the way through. Then, prick the center of the pastry with a fork to prevent excessive puffing during baking.
  3. Add Pesto and Toppings: Spread the basil pesto evenly over the center area of the pastry, staying within the scored border. Arrange the fresh mozzarella slices evenly over the pesto, followed by halved cherry tomatoes. Drizzle with olive oil and season with salt and pepper to taste.
  4. Bake the Pizza: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, or until the puff pastry is golden brown and crisp, and the cheese has melted and become bubbly.
  5. Garnish and Serve: Remove the baked pizza from the oven and allow it to cool slightly. Garnish with fresh basil leaves and drizzle with balsamic glaze if desired. Slice into portions and serve warm or at room temperature.

Notes

  • You can use store-bought or homemade basil pesto based on preference and availability.
  • For an added flavor boost, sprinkle grated Parmesan cheese over the toppings before baking.
  • This recipe works wonderfully as an appetizer, a light lunch, or a simple dinner served alongside a fresh salad.
