Ingredients
Tortillas:
- 4 large flour tortillas
Cheese:
- 1 cup shredded mozzarella cheese
Pepperoni:
- 1/2 cup sliced pepperoni
Pizza Sauce:
- 1/4 cup pizza sauce (plus more for dipping)
Seasoning:
- 1/4 teaspoon Italian seasoning
Cooking Spray:
- Nonstick cooking spray or butter for the pan
Instructions
- Prepare the Quesadillas: Lay out two tortillas and spread a thin layer of pizza sauce over each. Sprinkle half of the mozzarella cheese evenly on top, then add pepperoni slices and a pinch of Italian seasoning. Top with the remaining cheese and place the other two tortillas on top to form quesadillas.
- Cook the Quesadillas: Heat a large skillet over medium heat and lightly grease with cooking spray or butter. Cook one quesadilla at a time for 2–3 minutes per side, or until golden brown and the cheese is melted. Remove from pan, let cool slightly, then slice into wedges.
- Serve: Serve warm with extra pizza sauce for dipping.

- Add extras like cooked sausage, olives, mushrooms, or bell peppers for a loaded version.
- For a crispier finish, brush the outside of the tortillas with garlic butter before cooking.
