Ingredients
Crust
- 1 refrigerated pie crust (or homemade)
Filling
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/3 cup corn syrup
- 1 egg, beaten
- 1 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan to prevent sticking.
- Prepare the Crust: Roll out the pie crust on a flat surface. Using a cookie cutter, cut small circles sized to fit into the mini muffin pan cavities. Press each dough circle gently into the pan to form a small crust shell.
- Mix the Filling: In a mixing bowl, combine chopped pecans, brown sugar, corn syrup, the beaten egg, melted butter, vanilla extract, and a pinch of salt. Stir until all ingredients are thoroughly incorporated.
- Fill the Crusts: Evenly spoon the pecan mixture into each prepared crust, filling each mini pie about three-quarters full.
- Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the filling is set and the crust is golden brown.
- Cool and Serve: Remove the pan from the oven and allow the pecan pie bites to cool in the pan before gently removing them to serve.
Notes
- For a homemade crust, use your favorite pie dough recipe rolled thin.
- Check the bites toward the end of baking to avoid over-browning.
- Store leftovers in an airtight container at room temperature for up to 2 days.
