Description

Delightful and bite-sized pecan pie treats perfect for parties and gatherings. These Pecan Pie Bites combine a buttery crust with a rich, sweet pecan filling, baked to golden perfection in just 40 minutes.


Ingredients

Crust

  • 1 refrigerated pie crust (or homemade)

Filling

  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup corn syrup
  • 1 egg, beaten
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan to prevent sticking.
  2. Prepare the Crust: Roll out the pie crust on a flat surface. Using a cookie cutter, cut small circles sized to fit into the mini muffin pan cavities. Press each dough circle gently into the pan to form a small crust shell.
  3. Mix the Filling: In a mixing bowl, combine chopped pecans, brown sugar, corn syrup, the beaten egg, melted butter, vanilla extract, and a pinch of salt. Stir until all ingredients are thoroughly incorporated.
  4. Fill the Crusts: Evenly spoon the pecan mixture into each prepared crust, filling each mini pie about three-quarters full.
  5. Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the filling is set and the crust is golden brown.
  6. Cool and Serve: Remove the pan from the oven and allow the pecan pie bites to cool in the pan before gently removing them to serve.
