Ingredients
Pecan Pie Balls:
- 1 1/2 cups pecan halves, toasted
- 1 cup graham cracker crumbs
- 1/2 cup medjool dates, pitted and softened
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- pinch of salt
For Coating:
- 1/2 cup melted dark or semi-sweet chocolate
- crushed pecans or sea salt for garnish (optional)
Instructions
- Prepare the Pecan Mixture: In a food processor, pulse the toasted pecans until finely chopped. Add graham cracker crumbs, dates, maple syrup, vanilla extract, cinnamon, and salt. Process until sticky.
- Form the Balls: Scoop out tablespoon-sized portions and roll into balls. Place on a tray and freeze for 15–20 minutes.
- Coat with Chocolate: Melt chocolate and dip each ball to coat. Top with crushed pecans or sea salt if desired.
- Chill and Serve: Refrigerate until set and enjoy!
Notes
- To soften dates quickly, soak them in hot water for 10 minutes and drain.
- For a stronger pecan flavor, replace some graham crumbs with additional chopped pecans.
- Store in an airtight container in the fridge for up to a week or freeze for longer storage.
