Description

These Pecan Pie Balls are a delightful no-bake treat that captures all the flavors of pecan pie in a convenient bite-sized form. Made with toasted pecans, sweet dates, and a hint of cinnamon, these balls are coated in rich chocolate for a decadent finish. Perfect for holiday gatherings or a sweet snack anytime!


Ingredients

Pecan Pie Balls:

  • 1 1/2 cups pecan halves, toasted
  • 1 cup graham cracker crumbs
  • 1/2 cup medjool dates, pitted and softened
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • pinch of salt

For Coating:

  • 1/2 cup melted dark or semi-sweet chocolate
  • crushed pecans or sea salt for garnish (optional)


Instructions

  1. Prepare the Pecan Mixture: In a food processor, pulse the toasted pecans until finely chopped. Add graham cracker crumbs, dates, maple syrup, vanilla extract, cinnamon, and salt. Process until sticky.
  2. Form the Balls: Scoop out tablespoon-sized portions and roll into balls. Place on a tray and freeze for 15–20 minutes.
  3. Coat with Chocolate: Melt chocolate and dip each ball to coat. Top with crushed pecans or sea salt if desired.
  4. Chill and Serve: Refrigerate until set and enjoy!

Notes

  • To soften dates quickly, soak them in hot water for 10 minutes and drain.
  • For a stronger pecan flavor, replace some graham crumbs with additional chopped pecans.
  • Store in an airtight container in the fridge for up to a week or freeze for longer storage.
