These Pecan Pie Balls are a delightful no-bake dessert that combines the rich flavors of pecan pie with the convenience of a bite-sized treat. With a crunchy exterior of chocolate and a sweet, nutty interior, these balls are perfect for holiday gatherings or a quick indulgence.
Ingredients
Pecan Pie Balls:
- 2 cups finely chopped pecans
- 1 cup graham cracker crumbs
- 1 cup packed brown sugar
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 2 tablespoons maple syrup
- ¼ cup corn syrup
- 1 teaspoon vanilla extract
- 1 ½ cups semisweet or dark chocolate chips
- 1 tablespoon coconut oil or shortening (for melting chocolate)
Instructions
- In a large bowl, mix together chopped pecans, graham cracker crumbs, brown sugar, salt, and cinnamon. Stir in maple syrup, corn syrup, and vanilla extract until the mixture holds together when pressed.
- Roll into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20–30 minutes until firm.
- Meanwhile, melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip each chilled ball into the melted chocolate, allowing excess to drip off, and place back on the parchment-lined sheet. Chill until the chocolate is set.
- Serve chilled or at room temperature.
Notes
- Store in the refrigerator in an airtight container for up to 1 week or freeze for longer storage.
- For a boozy twist, add 1–2 tablespoons of bourbon to the filling.
