Description

These Pecan Pie Balls are a delightful no-bake dessert that combines the rich flavors of pecan pie with the convenience of a bite-sized treat. With a crunchy exterior of chocolate and a sweet, nutty interior, these balls are perfect for holiday gatherings or a quick indulgence.


Ingredients

Pecan Pie Balls:

  • 2 cups finely chopped pecans
  • 1 cup graham cracker crumbs
  • 1 cup packed brown sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 2 tablespoons maple syrup
  • ¼ cup corn syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups semisweet or dark chocolate chips
  • 1 tablespoon coconut oil or shortening (for melting chocolate)


Instructions

  1. In a large bowl, mix together chopped pecans, graham cracker crumbs, brown sugar, salt, and cinnamon. Stir in maple syrup, corn syrup, and vanilla extract until the mixture holds together when pressed.
  2. Roll into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20–30 minutes until firm.
  3. Meanwhile, melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  4. Dip each chilled ball into the melted chocolate, allowing excess to drip off, and place back on the parchment-lined sheet. Chill until the chocolate is set.
  5. Serve chilled or at room temperature.

Notes

  • Store in the refrigerator in an airtight container for up to 1 week or freeze for longer storage.
  • For a boozy twist, add 1–2 tablespoons of bourbon to the filling.
