  • 1 sheet of puff pastry or flatbread

Toppings

  • 2 pears, thinly sliced
  • 4 oz (120g) Gorgonzola cheese, crumbled
  • 1/4 cup (30g) chopped walnuts
  • A handful of arugula leaves
  • 1 tablespoon olive oil
  • Freshly cracked black pepper, to taste

Finishing

  • 1/4 cup (60ml) honey

Optional substitutions

  • Swap Gorgonzola with goat cheese or blue cheese

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s properly heated by the time you finish assembling the flatbread.
  2. Roll Out the Puff Pastry: Lightly flour your surface and roll out the puff pastry sheet evenly. Transfer it to a baking sheet. If you’re using flatbread as the base, simply place it directly onto the baking sheet.
  3. Drizzle Olive Oil: Pour and spread 1 tablespoon of olive oil evenly over the surface of the puff pastry or flatbread to enhance flavor and help toppings adhere.
  4. Arrange the Pear Slices: Slice your pears thinly and arrange them in an overlapping pattern across the entire base to ensure every bite has pear.
  5. Scatter the Cheese: Evenly sprinkle the crumbled Gorgonzola cheese over the layered pears, adding necessary saltiness and creaminess to the flatbread.
  6. Bake: Place the prepared flatbread into the preheated oven and bake for 15 to 20 minutes until the puff pastry is golden brown and crispy, or the flatbread is nicely toasted.
