Description

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the peanut butter, unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Gently fold in the rolled oats with a spatula.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are golden and the centers are just set. Allow the cookies to cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • If you prefer a chunkier texture, you can substitute chunky peanut butter for creamy.
  • Add chocolate chips, raisins, or chopped nuts to customize your cookies. You can stir in up to 1 cup of add-ins.
  • Chilling the dough for 30 minutes before baking helps prevent cookies from spreading too much.
