Description

These Peanut Butter Eggs are a delightful homemade treat featuring a creamy peanut butter center coated in rich, melted chocolate. Perfect for Easter or any time you crave a sweet, nutty dessert that’s easy to make and irresistibly delicious.

Ingredients

Peanut Butter Egg Mixture

  • 1 cup creamy peanut butter
  • 1 ½ cups powdered sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 2 cups milk chocolate chips (or semi-sweet chocolate)
  • 1 tablespoon coconut oil (optional, for smoothing the chocolate)

Instructions

  1. Prepare the Peanut Butter Mixture: In a mixing bowl, combine the peanut butter, powdered sugar, softened butter, and vanilla extract. Stir thoroughly until the mixture is smooth and well-combined, forming a thick dough-like consistency.
  2. Shape the Eggs: Using your hands, shape the peanut butter mixture into small egg shapes approximately 1 to 1.5 inches long. Place each shaped egg onto a baking sheet lined with parchment paper to prevent sticking.
  3. Chill the Peanut Butter Eggs: Refrigerate the shaped peanut butter eggs for 30 minutes, allowing them to firm up and hold their shape during chocolate coating.
  4. Melt the Chocolate: While the eggs chill, place the milk chocolate chips and optional coconut oil into a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  5. Coat the Eggs in Chocolate: Dip each chilled peanut butter egg into the melted chocolate, making sure it is completely covered. Use a fork or dipping tool to lift the egg out of the chocolate, allowing excess chocolate to drip back into the bowl. Place the coated eggs back on the parchment paper-lined baking sheet.
  6. Final Chill: Refrigerate the chocolate-coated peanut butter eggs for an additional 30 minutes or until the chocolate coating has fully hardened and set.
  7. Serve and Enjoy: Once set, these peanut butter eggs are ready to serve. Keep them refrigerated for best texture and freshness.

Notes

  • Using softened butter in the peanut butter mixture ensures a smooth consistency that is easy to shape.
  • The coconut oil in the chocolate melt helps create a shinier, smoother coating but is optional.
  • Store leftover peanut butter eggs in an airtight container in the refrigerator to maintain freshness.
  • You can substitute semi-sweet chocolate for milk chocolate chips to reduce sweetness if desired.
  • For a crunchy texture, consider adding chopped peanuts or pretzels to the peanut butter mixture.
