Ingredients
For the Truffles:
- 1 cup cottage cheese
- 1/2 cup peanut butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
- 1/4 cup crushed peanuts
- 1/4 cup cocoa powder
For Coating:
- 1/2 cup chocolate chips
- 1 tbsp coconut oil
- Crushed peanuts for topping
Instructions
- Prepare the Truffle Mixture: In a food processor, blend cottage cheese, peanut butter, honey, and vanilla extract until smooth. Transfer to a bowl and stir in chocolate chips and crushed peanuts.
- Form Truffle Balls: Scoop out mixture and roll into small balls. Place on a baking sheet lined with parchment paper and freeze for 30 minutes.
- Coat the Truffles: Melt chocolate chips and coconut oil together. Dip each truffle into the chocolate mixture, coating evenly. Sprinkle crushed peanuts on top.
