Description

Decadent yet wholesome Peanut Butter Cup Cottage Cheese Truffles combine creamy cottage cheese, peanut butter, and dark chocolate for a melt-in-your-mouth treat that’s both indulgent and protein-packed.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup natural peanut butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup dark chocolate chips (or chopped dark chocolate)
  • 1 tbsp coconut oil


Instructions

  1. Blend cottage cheese, peanut butter, maple syrup, vanilla extract, and salt in a food processor or high-speed blender until completely smooth and creamy.
  2. Scoop heaping teaspoons of the mixture and roll them into balls with your hands. If the mixture is sticky, chill for 10 minutes or dampen your hands.
  3. Place the truffle balls on a parchment-lined tray and freeze for at least 30 minutes to firm up.
  4. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 20-second bursts, stirring each time, until the chocolate is melted and smooth.
  5. Dip each truffle into the melted chocolate, coating them evenly, then return them to the parchment-lined tray. Refrigerate for 10-15 minutes to set the chocolate.

Notes

  • For extra crunch, sprinkle a little flaky sea salt or chopped roasted peanuts on top of the chocolate before it sets.
  • Store leftovers in an airtight container in the fridge for up to one week, or freeze for up to two months.
