Description
Decadent yet wholesome Peanut Butter Cup Cottage Cheese Truffles combine creamy cottage cheese, peanut butter, and dark chocolate for a melt-in-your-mouth treat that’s both indulgent and protein-packed.
Ingredients
- 1 cup cottage cheese
- 1/2 cup natural peanut butter
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup dark chocolate chips (or chopped dark chocolate)
- 1 tbsp coconut oil
Instructions
- Blend cottage cheese, peanut butter, maple syrup, vanilla extract, and salt in a food processor or high-speed blender until completely smooth and creamy.
- Scoop heaping teaspoons of the mixture and roll them into balls with your hands. If the mixture is sticky, chill for 10 minutes or dampen your hands.
- Place the truffle balls on a parchment-lined tray and freeze for at least 30 minutes to firm up.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 20-second bursts, stirring each time, until the chocolate is melted and smooth.
- Dip each truffle into the melted chocolate, coating them evenly, then return them to the parchment-lined tray. Refrigerate for 10-15 minutes to set the chocolate.
Notes
- For extra crunch, sprinkle a little flaky sea salt or chopped roasted peanuts on top of the chocolate before it sets.
- Store leftovers in an airtight container in the fridge for up to one week, or freeze for up to two months.
- For dairy-free truffles, substitute the cottage cheese with dairy-free alternatives like coconut yogurt or a plant-based cottage cheese.
