Ingredients
Cookies:
- 1/2 cup unsalted butter (softened)
 - 1/2 cup creamy peanut butter
 - 1/2 cup granulated sugar
 - 1/2 cup brown sugar (packed)
 - 1 large egg
 - 1 teaspoon vanilla extract
 - 1 1/4 cups all-purpose flour
 - 1/2 teaspoon baking soda
 - 1/4 teaspoon salt
 
Topping:
- 24 mini peanut butter cups (unwrapped)
 
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
 - Cream butter and sugars: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
 - Add egg and vanilla: Add the egg and vanilla extract, mixing well.
 - Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
 - Bake: Scoop about 1 tablespoon of dough into each mini muffin cup. Bake for 8–10 minutes or until lightly golden and puffed.
 - Add topping: Remove from the oven and immediately press one mini peanut butter cup into the center of each cookie.
 - Cool: Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
 
Notes
- For easier removal, chill the peanut butter cups before baking so they don’t melt too quickly.
