Description

Ingredients

Cookies:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Topping:

  • 24 mini peanut butter cups (unwrapped)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. Cream butter and sugars: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla: Add the egg and vanilla extract, mixing well.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  5. Bake: Scoop about 1 tablespoon of dough into each mini muffin cup. Bake for 8–10 minutes or until lightly golden and puffed.
  6. Add topping: Remove from the oven and immediately press one mini peanut butter cup into the center of each cookie.
  7. Cool: Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
