Ingredients

  • 1/2 cup creamy peanut butter

For the filling:

  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar

For the topping:

  • 1 cup semisweet chocolate chips
  • 1 tablespoon coconut oil or butter (optional, for smoother melting)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the cookie dough: Cream together the butter, peanut butter, granulated sugar, and brown sugar. Beat in the egg and vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms. Scoop tablespoon-sized portions, roll into balls, and flatten slightly on the baking sheet.
  3. Make the filling: Stir together the peanut butter and powdered sugar. Roll into small balls and press gently into the center of each cookie.
