Description

These Peanut Butter Balls with Rice Krispies are a delightful no-bake dessert perfect for any occasion. Creamy peanut butter, powdered sugar, and crispy cereal are combined to create a sweet and crunchy treat, dipped in luscious chocolate for a decadent finish.

Ingredients

For the Peanut Butter Balls:

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar
  • 1 ½ cups Rice Krispies cereal

For the Chocolate Coating:

  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. Mix Peanut Butter Mixture: In a large bowl, combine peanut butter, softened butter, and vanilla extract until smooth.
  2. Add Sugar and Cereal: Gradually mix in powdered sugar, then gently fold in Rice Krispies until coated.
  3. Form Balls: Roll tablespoon-sized portions into balls and place on a parchment-lined baking sheet.
  4. Chill: Refrigerate balls for at least 30 minutes.
  5. Melt Chocolate: In a microwave-safe bowl, melt chocolate chips with coconut oil in intervals.
  6. Dip and Coat: Dip balls into melted chocolate, then chill until set.

Notes

  • Store in the fridge for up to 2 weeks or freeze for longer storage.
  • For added crunch, use crunchy peanut butter or mix in chopped peanuts.
