Fruit Base
- 4 cups fresh or frozen peaches, peeled, pitted, and sliced (about 5-6 medium peaches)
Sweetener
- 2/3 cup granulated sugar
Liquid
- 2/3 cup water
Flavorings
- 1 tablespoon lemon juice (freshly squeezed, preferably)
- 1 teaspoon pure vanilla extract (optional)
Instructions
- Prepare the Peaches: Peel, pit, and slice the peaches if using fresh. For frozen peaches, thaw them slightly so they’re easy to blend.
- Make the Syrup: In a small saucepan, combine the sugar and water. Heat over medium, stirring until the sugar is fully dissolved. Remove from the heat and let it cool to room temperature.
- Blend the Ingredients: Add the peaches, cooled syrup, lemon juice, and vanilla (if using) to a blender or food processor. Blend until the mixture is completely smooth.
- Strain (Optional): For extra smooth sorbet, pour the mixture through a fine-mesh sieve to remove any bits of skin or pulp. This step is especially helpful if you didn’t peel the peaches.
- Chill the Mixture: Transfer the blended peach mixture to the refrigerator and chill it for at least 1-2 hours, or until very cold. This helps it freeze faster and more evenly.
- Freeze the Sorbet: Pour the chilled peach mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20-25 minutes, until creamy and thick.
- Harden in the Freezer: Transfer the churned sorbet to a freezer-safe container, cover, and freeze for at least 2-4 hours to firm up before serving.
Notes
- If you don’t have an ice cream maker, pour the peach mixture into a shallow container and freeze. Stir every 30-60 minutes until it reaches sorbet consistency.
- Use ripe, in-season peaches for the best flavor.
- Adjust sugar to taste depending on the sweetness of your fruit.
- The addition of lemon juice brightens the flavor and balances the sweetness.
- Sorbet will harden as it freezes—let it sit out for a few minutes before scooping for best texture.
