For the Peach Jalapeño Jam:

- 1 package (1.75 oz) fruit pectin
- 5 cups granulated sugar
Instructions
- Prepare the Jam: In a large saucepan, combine the chopped peaches, jalapeños, and lemon juice. Bring to a simmer over medium heat, stirring often.
- Add Pectin and Sugar: Gradually stir in the fruit pectin and bring the mixture to a full rolling boil. Add the sugar all at once and stir continuously.
- Boil and Jar: Return to a full rolling boil and boil hard for 1 minute. Remove from heat, skim off any foam, and ladle the hot jam into sterilized jars. Process in a boiling water bath for 10 minutes.
- Cool and Store: Let jars cool completely before storing in a cool, dry place or refrigerating for immediate use.
