Ingredients

For the Peach Jalapeño Jam:

  • 4 cups fresh peaches, peeled and finely chopped (about 56 medium peaches)
  • 23 jalapeño peppers, finely minced (remove seeds for milder heat)
  • 1 tablespoon lemon juice
  • 1 package (1.75 oz) fruit pectin
  • 5 cups granulated sugar


Instructions

  1. Prepare the Jam: In a large saucepan, combine the chopped peaches, jalapeños, and lemon juice. Bring to a simmer over medium heat, stirring often.
  2. Add Pectin and Sugar: Gradually stir in the fruit pectin and bring the mixture to a full rolling boil. Add the sugar all at once and stir continuously.
  3. Boil and Jar: Return to a full rolling boil and boil hard for 1 minute. Remove from heat, skim off any foam, and ladle the hot jam into sterilized jars. Process in a boiling water bath for 10 minutes.
  4. Cool and Store: Let jars cool completely before storing in a cool, dry place or refrigerating for immediate use.
