- ½ cup unsalted butter, cold and cut into cubes
Instructions
- Prepare the oven and baking dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish to prevent sticking.
- Mix the peach filling: In a large bowl, gently combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Toss carefully to coat the fruit evenly, then pour this mixture into the prepared baking dish.
- Make the crisp topping: In a separate bowl, stir together the oats, all-purpose flour, brown sugar, granulated sugar, ground cinnamon, and salt. Add the cold butter cubes, then use a pastry cutter or your fingers to mix until the mixture looks like coarse crumbs.
