Description

Ingredients

Filling

  • 6 cups (about 6-7) fresh peaches, peeled and sliced (or 2 lbs frozen, thawed)
  • 1/3 cup (65 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1 tbsp cornstarch

Topping

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (120 ml) whole milk
  • 4 tbsp (60 g) unsalted butter, melted

For Serving

  • Vanilla ice cream


Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Prepare the Filling: In a large bowl, combine the peeled and sliced peaches with granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg (if using), and cornstarch. Mix well to evenly coat the peaches. Spread this peach mixture evenly in the prepared baking dish.
  3. Make the Topping: In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk and melted butter until the batter is smooth and combined. Using a spoon, drop spoonfuls of this batter over the peach filling, leaving some areas of peaches exposed to allow steam to escape and the filling to bubble.
  4. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the topping turns a beautiful golden brown and the peach filling bubbles around the edges. After baking, let the cobbler cool slightly for about 10 to 15 minutes to set.
