Ingredients
French Toast Mixture
- 1 loaf French bread, cut into cubes
- 4 large eggs
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
Peach Mixture
- 2 cups diced peaches (fresh or canned)
- 1/4 cup brown sugar, packed
- 1 tsp ground nutmeg
Other Ingredients
- 1/4 cup unsalted butter, melted
- Powdered sugar for dusting
- Maple syrup for serving
Instructions
- Prepare the custard mixture: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, and ground cinnamon until fully combined to create a smooth custard base.
- Soak the bread: Add the French bread cubes to the custard mixture and gently stir to coat all pieces evenly. Allow the bread to soak for 10-15 minutes so it absorbs the mixture well.
- Make the peach topping: In a separate medium bowl, mix the diced peaches, brown sugar, and ground nutmeg thoroughly to combine the flavors.
- Preheat and prepare muffin tin: Set your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners to prevent sticking.
- Assemble the bites: Spoon the soaked bread mixture into each muffin cup, filling about halfway. Then add a spoonful of the peach mixture on top of the bread.
- Top with remaining bread mixture: Cover the peach layer with more soaked bread mixture until the muffin cups are nearly full.
- Add melted butter: Drizzle the melted unsalted butter over the top of each assembled muffin cup for added richness and moisture during baking.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the French toast bites are golden brown on top and cooked through.
- Serve: Once baked, remove the bites from the oven and let them cool slightly. Dust with powdered sugar and serve warm with maple syrup for dipping or drizzling.
Notes
- Fresh peaches provide the best natural flavor, but canned peaches can be used as a convenient substitute.
- Allowing the bread to soak fully in the custard ensures soft, custardy bites with great texture.
- You can prepare these bites a day ahead and reheat them in the oven before serving.
- For a dairy-free alternative, substitute heavy cream and milk with coconut milk or almond milk.
- Add a pinch of salt to the custard mixture to enhance flavors if desired.
