Description

Peach Cobbler French Toast Bites combine the comforting flavors of peach cobbler with classic French toast in a convenient bite-sized form. Soft cubes of French bread are soaked in a rich custard mixture, layered with spiced peaches, and baked until golden and fluffy. Perfect for a breakfast treat or brunch gathering, these bites are served warm with powdered sugar and maple syrup.

Ingredients

French Toast Mixture

  • 1 loaf French bread, cut into cubes
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Peach Mixture

  • 2 cups diced peaches (fresh or canned)
  • 1/4 cup brown sugar, packed
  • 1 tsp ground nutmeg

Other Ingredients

  • 1/4 cup unsalted butter, melted
  • Powdered sugar for dusting
  • Maple syrup for serving

Instructions

  1. Prepare the custard mixture: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, and ground cinnamon until fully combined to create a smooth custard base.
  2. Soak the bread: Add the French bread cubes to the custard mixture and gently stir to coat all pieces evenly. Allow the bread to soak for 10-15 minutes so it absorbs the mixture well.
  3. Make the peach topping: In a separate medium bowl, mix the diced peaches, brown sugar, and ground nutmeg thoroughly to combine the flavors.
  4. Preheat and prepare muffin tin: Set your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners to prevent sticking.
  5. Assemble the bites: Spoon the soaked bread mixture into each muffin cup, filling about halfway. Then add a spoonful of the peach mixture on top of the bread.
  6. Top with remaining bread mixture: Cover the peach layer with more soaked bread mixture until the muffin cups are nearly full.
  7. Add melted butter: Drizzle the melted unsalted butter over the top of each assembled muffin cup for added richness and moisture during baking.
  8. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the French toast bites are golden brown on top and cooked through.
  9. Serve: Once baked, remove the bites from the oven and let them cool slightly. Dust with powdered sugar and serve warm with maple syrup for dipping or drizzling.

Notes

  • Fresh peaches provide the best natural flavor, but canned peaches can be used as a convenient substitute.
  • Allowing the bread to soak fully in the custard ensures soft, custardy bites with great texture.
  • You can prepare these bites a day ahead and reheat them in the oven before serving.
  • For a dairy-free alternative, substitute heavy cream and milk with coconut milk or almond milk.
  • Add a pinch of salt to the custard mixture to enhance flavors if desired.
