Ingredients
Peach Filling:
- 2 cups fresh or canned peaches (peeled and diced)
- 1/4 cup granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch mixed with 1 tablespoon water
Egg Roll Assembly:
- 8 egg roll wrappers
For the Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 2 tablespoons melted butter
- Vegetable oil for frying
- Powdered sugar for dusting (optional)
Instructions
- Peach Filling: In a saucepan, cook peaches, sugars, cinnamon, nutmeg, and lemon juice until slightly softened. Add cornstarch slurry, cook until thickened, and cool.
- Egg Roll Assembly: Place peach mixture on each wrapper, fold and seal. Fry in oil until golden and crispy.
