Description

These Peach Cobbler Egg Rolls are a delightful twist on the classic peach cobbler, with sweet peach filling wrapped in crispy egg roll wrappers and coated with cinnamon sugar. They’re a perfect fusion of flavors and textures, making them a fantastic dessert option for any occasion.

Ingredients

Peach Filling:

  • 2 cups fresh or canned peaches (peeled and diced)
  • 1/4 cup granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Egg Roll Assembly:

  • 8 egg roll wrappers

For the Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter
  • Vegetable oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. Peach Filling: In a saucepan, cook peaches, sugars, cinnamon, nutmeg, and lemon juice until slightly softened. Add cornstarch slurry, cook until thickened, and cool.
  2. Egg Roll Assembly: Place peach mixture on each wrapper, fold and seal. Fry in oil until golden and crispy.
  3. Cinnamon Sugar Coating: Brush warm egg rolls with butter, then coat with cinnamon sugar mixture. Dust with powdered sugar if desired.

Notes

  • Serve with vanilla ice cream or whipped cream for a delicious dessert.
  • You can use frozen peaches—just thaw and drain them well first.
