Description

Ingredients

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Peach Layer:

  • 2 cups fresh or canned peaches, chopped and drained if canned
  • 1/2 tsp ground cinnamon
  • 2 tbsp brown sugar

Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold butter, cubed


Instructions

  1. Prepare Crust: Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake.
  2. Make Cheesecake Filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla and sour cream. Pour over crust.
  3. Add Peach Layer: Combine peaches, cinnamon, and brown sugar. Spread over cheesecake layer.
  4. Make Crumble Topping: Mix flour and brown sugar, cut in cold butter until crumbly. Sprinkle over peaches.
  5. Bake: Bake for 40–45 minutes until set. Cool and chill before cutting into bars.

Notes

  • Use ripe but firm peaches for best results.
  • Bars can be made a day ahead and stored in the fridge.
  • For extra flavor, add a pinch of nutmeg to the crumble topping.
