Description

This Pavlova Wreath is a stunning and airy dessert featuring a crispy meringue base topped with whipped cream and vibrant fresh fruits. Perfect for special occasions, this elegant treat combines light textures with sweet and tangy flavors, enhanced with fresh mint for a refreshing finish.

Ingredients

Meringue

  • 4 large egg whites (room temperature)
  • 1 cup granulated sugar (super fine)
  • 1 tsp white vinegar
  • 1 tsp pure vanilla extract

Topping

  • 1 cup heavy cream
  • 2 cups mixed fresh fruits (berries, kiwi, passionfruit)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper to prevent the meringue from sticking.
  2. Beat egg whites: In a clean bowl, beat the egg whites on medium speed until soft peaks form, indicating the mixture has started to thicken but is still slightly pliable.
  3. Add sugar gradually: Slowly add the super fine granulated sugar while whipping continuously until the meringue becomes glossy and forms stiff peaks that hold their shape firmly.
  4. Fold in flavorings: Gently fold in the white vinegar and pure vanilla extract into the meringue mixture to add stability and enhance flavor without deflating the airy texture.
  5. Shape the meringue wreath: Spoon the meringue onto the prepared baking sheet forming a large circular wreath shape. Use the back of the spoon to create swirls or small peaks for texture and an attractive appearance.
  6. Bake and cool: Bake the meringue in the preheated oven for about 1 hour until crisp. Turn off the oven and allow the meringue to cool completely inside the oven with the door slightly ajar to prevent cracking.
  7. Prepare the topping: Whip the heavy cream until soft peaks form, providing a fluffy and smooth contrast to the crisp meringue.
  8. Assemble the Pavlova: Once the meringue wreath has cooled, top it generously with the whipped cream, then decorate with the mixed fresh fruits such as berries, kiwi, and passionfruit.
  9. Garnish and serve: Add fresh mint leaves on top for a pop of color and fresh aroma before serving this delightful dessert.

Notes

  • Use room temperature eggs for better volume when whipping the egg whites.
  • Super fine sugar dissolves faster, leading to a smoother meringue texture.
  • Letting the meringue cool slowly prevents it from cracking.
  • Choose fresh, ripe fruits for optimal taste and vibrant presentation.
  • This Pavlova is best enjoyed the day it is assembled to keep the meringue crisp.
