Ingredients
For the soup:
- 6 cups chicken broth
- ¾ cup pastina pasta (such as Acini di Pepe or Stelline)
- 1 tablespoon unsalted butter
- 1 large egg
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
For garnish:
- Chopped fresh parsley for garnish (optional)
Instructions
- In a medium pot, bring the chicken broth to a boil.
- Meanwhile, in a small bowl, beat the egg and mix in the grated Parmesan cheese.
- Add the butter and stir until melted.
Stir in the pastina and reduce the heat to a simmer. Cook for about 6–7 minutes, or until the pasta is tender, stirring occasionally.
Once the pastina is cooked, reduce the heat to low. Slowly drizzle the egg mixture into the soup, stirring constantly to create delicate egg ribbons.
Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley if desired. Serve warm.
