Description

Ingredients

Pasta:

  • 8 oz pasta (such as penne or spaghetti)

Other Ingredients:

  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 5 oz fresh spinach (roughly chopped)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pasta water (reserved)
  • Salt and black pepper to taste


Instructions

  1. Cook the Pasta: Boil the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.
  2. Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 1 minute.
  3. Add Spinach: Stir in chopped spinach, cook until wilted, about 2-3 minutes.
  4. Combine: Add drained pasta to the skillet with reserved pasta water. Toss to coat the pasta.
  5. Finish: Mix in Parmesan cheese, season with salt and pepper. Serve warm.

Notes

  • You can add grilled chicken, mushrooms, or sun-dried tomatoes for additional flavor and protein.
  • Whole wheat or gluten-free pasta can be used as alternatives.
