Ingredients
- 2 lbs baby potatoes (red, Yukon gold, or fingerling), halved or quartered
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup finely grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and dry potatoes, then cut into even pieces.
- In a large bowl, toss potatoes with olive oil, garlic, salt, and pepper until coated.
- Add Parmesan cheese and toss again. Spread potatoes in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway, until potatoes are golden brown and crispy.
- Sprinkle with fresh parsley and serve hot.
