Description

Parmesan Garlic Roasted Potatoes are crispy, golden, and cheesy with savory garlic flavor—an effortless yet irresistible side that elevates any meal.

Ingredients

  • 2 lbs baby potatoes (red, Yukon gold, or fingerling), halved or quartered
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and dry potatoes, then cut into even pieces.
  3. In a large bowl, toss potatoes with olive oil, garlic, salt, and pepper until coated.
  4. Add Parmesan cheese and toss again. Spread potatoes in a single layer on the prepared baking sheet.
  5. Roast for 25–30 minutes, flipping halfway, until potatoes are golden brown and crispy.
  6. Sprinkle with fresh parsley and serve hot.

Notes

  • Dry potatoes thoroughly before roasting for maximum crispiness.
  • Use freshly grated Parmesan for best flavor and texture.
  • Store leftovers in the fridge for up to 4 days; reheat in the oven to restore crispness.
  • Perfect as a side for meats, vegetarian dishes, or brunch spreads.
