Ingredients

Cod Fillets:

  • 4 cod fillets (about 6 ounces each)

Panko Parmesan Coating:

  • ¾ cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Other:

  • 3 tablespoons olive oil
  • 1 large egg
  • lemon wedges for serving

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or grease.
  2. Prepare the Coating: Mix panko breadcrumbs, Parmesan cheese, garlic powder, parsley, paprika, salt, and pepper in a shallow bowl. Beat the egg in a separate bowl.
  3. Coat the Cod: Pat dry the cod fillets, dip in egg, then coat with the panko mixture. Place on the baking sheet, drizzle with olive oil.
  4. Bake: Bake for 15–18 minutes until golden and flakes easily. Serve with lemon wedges.

Notes
