Description

Ingredients

Chicken

  • 2 large chicken breasts (sliced in half lengthways; or use 4 small breasts)

Seasonings

  • 3/4 tsp garlic powder
  • 3/4 tsp smoked paprika
  • 3/4 tsp onion powder
  • 3/4 tsp oregano
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper

Oils and Fats

  • 3 tbsp olive oil (divided)
  • 2 tbsp butter


Instructions

  1. Prepare the Chicken: If using larger chicken breasts, slice each in half lengthwise to create four thinner cutlets. Pat the chicken dry with paper towels to ensure a good sear. Brush 1 tablespoon of olive oil over all sides of the chicken breasts.
  2. Season the Chicken: In a small bowl, mix together garlic powder, smoked paprika, onion powder, oregano, salt, black pepper, and cayenne pepper. Sprinkle the spice mixture evenly onto all sides of the chicken breasts using your hands to coat thoroughly.
  3. Sear the Chicken: Heat the remaining 2 tablespoons of olive oil in a large deep skillet or cast iron skillet over medium-high heat. Once the oil is hot, carefully place the chicken breasts smooth side down in the skillet. Cook for 5 minutes undisturbed to develop a golden crust. Flip the chicken using tongs, then reduce the heat to medium and continue cooking for another 2 to 5 minutes. Cooking time will vary based on thickness, so check for an internal temperature of 165°F (74°C) with a meat thermometer to ensure doneness.
  4. Add Butter and Remove from Heat: Add the 2 tablespoons of butter to the skillet with the chicken and allow it to melt with the residual heat. Remove the skillet from the heat source to prevent overcooking.
  5. Rest and Serve: Transfer the chicken breasts to a cutting board and let them rest for 5 minutes to allow juices to redistribute. Slice and serve immediately for best flavor and moisture.
