Ingredients
Pasta:
- 12 ounces short pasta (like rotini or penne)
Beef Mixture:
- 1 pound ground beef or ground turkey
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chiles (undrained)
Creamy Sauce:
- 1 cup sour cream
- 1/2 cup cream cheese (softened)
- 1/2 cup salsa
- 1 1/2 cups shredded cheddar cheese (divided)
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Garnish:
- Chopped cilantro and sliced green onions
Instructions
- Cook the Pasta: Boil pasta until just shy of al dente. Drain and set aside.
- Prepare the Beef Mixture: Brown ground beef, then add taco seasoning and diced tomatoes. Simmer.
- Make the Creamy Sauce: Combine sour cream, cream cheese, salsa, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
- Combine and Bake: Mix beef with sauce and pasta. Transfer to a baking dish, top with cheese, refrigerate overnight. Bake until golden.
- Garnish and Serve: Sprinkle with cilantro and green onions before serving.
