Description

This Overnight Taco Pasta is a delicious Tex-Mex inspired casserole that you can prepare ahead of time for a convenient and satisfying meal. It’s packed with flavorful ingredients like ground beef, cheese, and salsa, making it a family favorite.


Ingredients

Pasta:

  • 12 ounces short pasta (like rotini or penne)

Beef Mixture:

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chiles (undrained)

Creamy Sauce:

  • 1 cup sour cream
  • 1/2 cup cream cheese (softened)
  • 1/2 cup salsa
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Garnish:

  • Chopped cilantro and sliced green onions


Instructions

  1. Cook the Pasta: Boil pasta until just shy of al dente. Drain and set aside.
  2. Prepare the Beef Mixture: Brown ground beef, then add taco seasoning and diced tomatoes. Simmer.
  3. Make the Creamy Sauce: Combine sour cream, cream cheese, salsa, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  4. Combine and Bake: Mix beef with sauce and pasta. Transfer to a baking dish, top with cheese, refrigerate overnight. Bake until golden.
  5. Garnish and Serve: Sprinkle with cilantro and green onions before serving.
