Wake up to the delicious aroma of this hearty Overnight Slow Cooker Breakfast Casserole. Packed with sausage, peppers, cheese, and eggs, it’s the perfect make-ahead dish for busy mornings or holiday breakfasts.


Ingredients

Ingredients:

  • 1 pound breakfast sausage (cooked and crumbled)
  • 1 medium onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 3 cups frozen hash browns (shredded or diced)
  • 2 cups shredded cheddar cheese
  • 12 large eggs
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • nonstick cooking spray


Instructions

  1. Spray the slow cooker: Spray the inside of your slow cooker with nonstick cooking spray.
  2. Layer ingredients: Layer half of the hash browns, sausage, peppers, onions, and cheese in the slow cooker. Repeat with remaining ingredients.
  3. Whisk egg mixture: In a bowl, whisk eggs, milk, garlic powder, salt, and pepper. Pour over layers in slow cooker.
  4. Cook: Cover and cook on low for 7–8 hours or high for 3–4 hours until set and slightly golden on top.
  5. Rest and serve: Let it rest for 10 minutes before serving.
