Ingredients

Potatoes:

  • 2 pounds Yukon Gold potatoes (cut into 1-inch chunks)

Onions:

  • 1 large yellow onion (sliced)

Seasonings:

  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper or foil.
  2. Prepare Potatoes and Onions: In a large bowl, combine the potato chunks and sliced onion. Drizzle with olive oil and sprinkle with garlic powder, thyme, smoked paprika, salt, and pepper. Toss until everything is evenly coated.
  3. Roast: Spread the mixture in a single layer on the prepared baking sheet, ensuring potatoes are cut-side down. Roast for 35–40 minutes, flipping once halfway through, until golden brown and fork-tender.
  4. Garnish and Serve: Garnish with fresh parsley before serving, if desired.
