Pork Chops
- 4 bone-in pork chops (about 1-inch thick)

Breading

- 1/4 cup milk
- 1 1/2 cups seasoned breadcrumbs (or panko)
- 1 teaspoon garlic powder

Golden Mushroom Gravy
- 1 can (10.5 oz) golden mushroom soup
- 1/2 cup low-sodium chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Prep the pork chops: Pat pork chops dry with paper towels. Season both sides with salt and black pepper, then let sit at room temperature for 10 minutes to take the chill off.
- Bread the chops: Prepare three shallow bowls: one with flour, one with whisked eggs and milk, and one with breadcrumbs, garlic powder, and paprika mixed together. Dredge each pork chop first in flour (shaking off excess), then in the egg mixture, and finally in the breadcrumb mixture, pressing gently for good adhesion.
- Arrange and prepare for baking: Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment and drizzle with about half the oil. Place breaded chops on the sheet and drizzle or spray lightly with the remaining oil to promote browning.
- Bake the pork chops: Bake for 22–26 minutes, flipping halfway through, until breading is crisp and pork chops register at least 145°F (63°C) in the thickest part.
- Make the golden mushroom gravy: While chops bake, combine golden mushroom soup, chicken broth, Worcestershire sauce, and thyme in a saucepan over medium heat. Stir well and bring to a gentle simmer; cook for about 5 minutes, stirring occasionally. Adjust seasoning with salt and pepper as needed.
- Serve: Transfer crispy pork chops to serving plates and generously spoon golden mushroom gravy over the top. Serve hot.

- To keep the breading extra crisp, place a wire rack on your baking sheet and arrange the chops on it.
- Try panko breadcrumbs for a crunchier crust.
- Letting the pork chops rest for a few minutes after cooking helps the juices redistribute for extra tenderness.
