Ingredients

Meat

  • 1/2 lb beef sirloin or flank steak, thinly sliced against the grain

Vegetables & Aromatics

  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 2 green onions, sliced (for garnish)

Rice & Eggs

  • 2 cups cooked rice (preferably day-old rice for better texture)
  • 2 eggs, beaten

Sauces & Oils

  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce (optional)
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper


Instructions

  1. Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and cook for 3–4 minutes, stirring occasionally, until browned and cooked through. Remove the beef from the skillet and set aside.
  2. Sauté the onion: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and cook for 3–4 minutes until softened and slightly caramelized, enhancing the flavor.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds, stirring frequently, until fragrant but not burnt.
  4. Scramble the eggs: Push the onion and garlic mixture to the side of the skillet. Pour the beaten eggs into the empty space and scramble them until just set, about 2 minutes.
  5. Combine rice: Add the cooked rice to the skillet, breaking up any clumps with your spoon or spatula. Stir everything together well to combine all ingredients evenly.
  6. Mix beef and sauces: Return the cooked beef to the skillet. Stir in the soy sauce, oyster sauce (if using), sesame oil, and black pepper. Continue cooking and stirring for an additional 2–3 minutes to allow the flavors to meld and the rice to heat thoroughly.
  7. Adjust seasoning: Taste the fried rice and adjust the seasoning if needed by adding more soy sauce or pepper according to preference.
