Description

Ingredients

Pasta:

  • 8 oz elbow macaroni (or pasta of choice)

Cheese Sauce:

  • 1 tablespoon butter
  • 1 clove garlic (minced)
  • 1 cup pumpkin purée
  • 1 1/2 cups milk (any kind)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • chopped fresh parsley for garnish (optional)


Instructions

  1. Cook Pasta: In a large pot, cook pasta according to package directions in salted water until al dente. Drain and set aside.
  2. Make Cheese Sauce: In the same pot over medium heat, melt the butter and sauté garlic for 30 seconds. Add pumpkin purée and milk, whisk until smooth, about 2–3 minutes.
  3. Add Cheeses: Stir in cheddar, mozzarella, and Parmesan until melted. Season with nutmeg, salt, pepper, and smoked paprika.
  4. Combine: Return pasta to pot, stir to coat in sauce. Cook for 1–2 minutes until creamy.
