Description

This One-Pot Spicy Gochujang Alfredo Pasta offers a creamy and flavorful twist on traditional Alfredo by incorporating spicy Korean gochujang paste. Made with simple ingredients and cooked entirely on the stovetop, it’s a quick and comforting main dish perfect for weeknight dinners. The richness of heavy cream and Parmesan combined with the umami-packed gochujang creates a unique fusion that’s both indulgent and exciting. Garnished with green onions and sesame seeds, this pasta delivers a satisfying balance of spicy, savory, and creamy flavors.

Ingredients

Pasta and Sauce

  • 12 ounces fettuccine or linguine pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 small yellow onion, diced
  • 2 tablespoons gochujang paste
  • 2 cups heavy cream
  • 1 cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

Garnish

  • 2 tablespoons chopped green onions
  • Sesame seeds (optional)

Instructions

  1. Heat olive oil and sauté aromatics: In a large pot or deep skillet over medium heat, warm the olive oil. Add the minced garlic and diced yellow onion, sautéing until they become soft and fragrant, about 3 to 4 minutes.
  2. Add gochujang paste: Stir in the gochujang paste and cook for an additional minute to release its bold, spicy flavor into the oil and aromatics.
  3. Add liquids and seasonings: Pour in the heavy cream and chicken or vegetable broth. Then add soy sauce and sesame oil. Stir everything together to combine evenly.
  4. Simmer and add pasta: Bring the mixture to a low simmer, then add the uncooked fettuccine or linguine pasta. Stir the pasta to coat it completely with the sauce.
  5. Cook pasta covered: Reduce heat to medium-low and cover the pot. Allow the pasta to cook for 10 to 12 minutes, stirring occasionally to prevent sticking, until it is al dente and the sauce has thickened beautifully.
  6. Finish with cheese and seasoning: Stir in the grated Parmesan cheese until it melts into a creamy sauce. Season with salt, black pepper, and crushed red pepper flakes (if using) according to your taste.
  7. Serve and garnish: Serve the pasta hot, garnished with chopped green onions and a sprinkle of sesame seeds for a final touch of texture and flavor.

Notes

  • For added protein, stir in cooked chicken, shrimp, or tofu.
  • Use half-and-half instead of heavy cream to reduce richness and calories.
  • Adjust the amount of gochujang paste to control the heat level to your preference.
