Ingredients

1 lb (450g) chicken breast, boneless and skinless, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper, to taste

1/2 cup heavy cream

1 cup chicken broth

1 can (14.5 oz) diced tomatoes, drained

12 oz (340g) penne pasta

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat.

Season the chicken pieces with salt, pepper, oregano, and basil. Add to the pot and cook until browned on all sides (about 5-7 minutes).

Add the garlic and cook for another minute until fragrant.

Stir in the chicken broth, diced tomatoes, and heavy cream. Bring to a simmer.

Add the penne pasta, making sure it’s covered by the liquid. Bring it to a simmer, then reduce the heat to low.

Cover the pot and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

Stir in the Parmesan cheese and cook for an additional 1-2 minutes until melted and creamy.
