Description

This creamy, savory One-Pot Marry Me Chicken Pasta is a delicious and easy weeknight dinner. The tender chicken, rich sauce, and perfectly cooked pasta will have everyone asking for the recipe. With minimal cleanup and maximum flavor, this dish is a total winner!


Ingredients

  • 1 lb (450g) chicken breast, boneless and skinless, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon crushed red pepper flakes (optional)

  • Salt and pepper, to taste

  • 1/2 cup heavy cream

  • 1 cup chicken broth

  • 1 can (14.5 oz) diced tomatoes, drained

  • 12 oz (340g) penne pasta

  • 1/2 cup grated Parmesan cheese

 

  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat.

  • Season the chicken pieces with salt, pepper, oregano, and basil. Add to the pot and cook until browned on all sides (about 5-7 minutes).

  • Add the garlic and cook for another minute until fragrant.

  • Stir in the chicken broth, diced tomatoes, and heavy cream. Bring to a simmer.

  • Add the penne pasta, making sure it’s covered by the liquid. Bring it to a simmer, then reduce the heat to low.

  • Cover the pot and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

  • Stir in the Parmesan cheese and cook for an additional 1-2 minutes until melted and creamy.

 

  • Garnish with fresh parsley before serving.


Notes

  • For an extra kick, add a pinch of crushed red pepper flakes.

  • You can use any short pasta like rigatoni or farfalle instead of penne if preferred.

  • If the sauce gets too thick, add more chicken broth or a splash of milk to reach your desired consistency.
