Description

This One Pot Marry Me Chicken Orzo is a creamy and flavorful dish that combines tender chicken thighs, orzo pasta, sun-dried tomatoes, and Parmesan cheese in a rich sauce. With a touch of Italian seasoning and fresh basil, this easy stovetop meal is sure to impress.


Ingredients

Chicken:

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

Orzo Mixture:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh basil, chopped
  • Additional Parmesan and basil for garnish


Instructions

  1. Season and Sear Chicken: Season chicken thighs with salt, pepper, paprika, and garlic powder. Sear in olive oil until golden brown. Set aside.
  2. Prepare Orzo Mixture: Sauté garlic and red pepper flakes. Add broth, cream, orzo, sun-dried tomatoes, Parmesan, and seasoning. Nestle chicken back in.
  3. Simmer: Cover and simmer until orzo is tender and chicken is cooked through, about 12-15 minutes.
  4. Finish and Serve: Sprinkle with fresh basil and garnish with Parmesan before serving.

Notes

  • If the orzo absorbs too much liquid, add a splash of broth or cream before serving.
  • You can substitute chicken breasts for thighs but adjust cooking time to prevent drying.
  • For added flavor, stir in a handful of spinach at the end of cooking.
