Ingredients
Chicken:
- 1 ½ pounds boneless skinless chicken thighs
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
Orzo Mixture:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup orzo pasta
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh basil, chopped
- Additional Parmesan and basil for garnish
Instructions
- Season and Sear Chicken: Season chicken thighs with salt, pepper, paprika, and garlic powder. Sear in olive oil until golden brown. Set aside.
- Prepare Orzo Mixture: Sauté garlic and red pepper flakes. Add broth, cream, orzo, sun-dried tomatoes, Parmesan, and seasoning. Nestle chicken back in.
- Simmer: Cover and simmer until orzo is tender and chicken is cooked through, about 12-15 minutes.
- Finish and Serve: Sprinkle with fresh basil and garnish with Parmesan before serving.
Notes
- If the orzo absorbs too much liquid, add a splash of broth or cream before serving.
- You can substitute chicken breasts for thighs but adjust cooking time to prevent drying.
- For added flavor, stir in a handful of spinach at the end of cooking.
