This One Pot Lemon Basil, Asparagus, and Sausage Pasta is a delightful blend of flavors that come together in a single pot for a quick and satisfying meal. The tangy lemon, fragrant basil, savory sausage, and crisp asparagus create a harmonious dish that is perfect for a busy weeknight dinner.


Ingredients

Pasta:

  • 12 ounces penne or your favorite short pasta

Other Ingredients:

  • 1 tablespoon olive oil
  • 12 ounces Italian sausage, casings removed
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • zest of 1 lemon
  • juice of 1 lemon
  • 2 1/2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • salt and pepper to taste


Instructions

  1. Cook Sausage: In a skillet, cook sausage until browned. Add garlic and red pepper flakes.
  2. Add Ingredients: Stir in pasta, broth, lemon zest, and juice. Simmer covered for 8 minutes.
  3. Add Asparagus: Add asparagus and cook for 4–5 minutes until pasta is al dente.
  4. Finish Dish: Stir in cream, Parmesan, and basil. Cook for 2 more minutes. Season with salt and pepper.
  5. Serve: Garnish with basil and Parmesan. Serve hot.

Notes

  • Use turkey or chicken sausage for a leaner version.
  • Substitute spinach or peas for asparagus when out of season.
  • To make dairy-free, omit Parmesan and cream, and use unsweetened almond milk.
