Ingredients
Pasta:
- 12 ounces penne or your favorite short pasta
Other Ingredients:
- 1 tablespoon olive oil
- 12 ounces Italian sausage, casings removed
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- zest of 1 lemon
- juice of 1 lemon
- 2 1/2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- salt and pepper to taste
Instructions
- Cook Sausage: In a skillet, cook sausage until browned. Add garlic and red pepper flakes.
- Add Ingredients: Stir in pasta, broth, lemon zest, and juice. Simmer covered for 8 minutes.
- Add Asparagus: Add asparagus and cook for 4–5 minutes until pasta is al dente.
- Finish Dish: Stir in cream, Parmesan, and basil. Cook for 2 more minutes. Season with salt and pepper.
- Serve: Garnish with basil and Parmesan. Serve hot.
Notes
- Use turkey or chicken sausage for a leaner version.
- Substitute spinach or peas for asparagus when out of season.
- To make dairy-free, omit Parmesan and cream, and use unsweetened almond milk.
