Description

This One-Pot Honey Garlic Chicken and Noodles recipe is a quick and flavorful Asian-inspired dish that combines tender chicken with a sweet and savory garlic sauce, paired with vegetables and noodles for a satisfying meal.

Ingredients

Chicken and Marinade:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

Sauce:

  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons hoisin sauce (optional)
  • 2 cups chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Vegetables and Garnish:

  • 1 cup shredded carrots
  • 1 cup snap peas or broccoli florets
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook Chicken: Heat olive oil in a large pot, add chicken, and cook until browned and cooked through.
  2. Make Sauce: Add garlic, then stir in honey, soy sauce, hoisin sauce, and chicken broth. Bring to a boil.
  3. Add Noodles: Stir in uncooked noodles, cover, and simmer until tender, stirring occasionally.
  4. Add Vegetables: Mix in shredded carrots and snap peas or broccoli during the last few minutes of cooking.
  5. Thicken Sauce: If desired, add cornstarch slurry to thicken the sauce.
  6. Finish and Serve: Remove from heat, stir in green onions, and garnish with sesame seeds before serving.

Notes

  • Swap the veggies with bell peppers or spinach based on preference.
  • For added heat, include sriracha or red pepper flakes to taste.
