Ingredients

Chicken and Rice:

  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 pound boneless skinless chicken thighs or breasts (cut into chunks)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 cup long grain white rice (rinsed)
  • 2 1/4 cups chicken broth
  • 1 cup frozen peas and carrots (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Heat olive oil: In a large pot or deep skillet over medium heat.
  2. Cook onion and garlic: Until softened and fragrant.
  3. Add chicken and season: With salt, pepper, paprika, and thyme; cook until lightly browned.
  4. Stir in rice: Coating with spices and oil.
  5. Pour in broth: Bring to a boil, then reduce heat and simmer until rice is tender.
  6. Add peas and carrots: If using, during the last 5 minutes of cooking.
