Chicken and Rice:
- 2 tablespoons olive oil
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 pound boneless skinless chicken thighs or breasts (cut into chunks)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 cup long grain white rice (rinsed)
- 2 1/4 cups chicken broth
- 1 cup frozen peas and carrots (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat olive oil: In a large pot or deep skillet over medium heat.
- Cook onion and garlic: Until softened and fragrant.
- Add chicken and season: With salt, pepper, paprika, and thyme; cook until lightly browned.
- Stir in rice: Coating with spices and oil.
- Pour in broth: Bring to a boil, then reduce heat and simmer until rice is tender.
