This One Pot Cheesy Chicken Pasta is a delicious and quick meal perfect for busy weeknights. Tender chicken thighs and aromatic onions simmer with Italian seasoning and garlic powder in a rich pasta sauce, combined with rigatoni pasta. Finished with creamy mozzarella and Parmesan cheeses, this comforting dish comes together in just 25 minutes using only one pot, minimizing cleanup while delivering maximum flavor.
Ingredients
Protein and Vegetables
- 3 medium boneless, skinless chicken thighs (breasts work too)
- 1 medium onion, diced
Oils and Seasonings
- 2 Tbsp avocado oil
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- Salt and pepper, to taste
- Dry parsley, for garnish
Pasta and Cheese
- 16 oz dry pasta (rigatoni recommended)
- 24 oz jar pasta sauce
- Water (to fill the empty pasta sauce jar)
- 3/4 cup mozzarella cheese, divided
- 1/2 cup Parmesan cheese
Instructions
- Cook the chicken: In a large saucepan, heat 2 tablespoons of avocado oil over medium-high heat. Add the chicken thighs and cook until no longer pink inside, approximately 5 minutes. Remove the chicken from the pan and set aside on a plate.
- Sauté the onions and season: In the same saucepan, add the diced onion along with 1 teaspoon Italian seasoning and 1 teaspoon garlic powder. Cook, stirring occasionally, for about 2 minutes or until the onions are softened. Season with salt and pepper to taste.
- Add pasta sauce and water: Pour in the 24 oz jar of pasta sauce, then use the empty jar to measure and add an equal amount of water to the saucepan. Stir to combine and bring the mixture to a boil over medium-high heat, then reduce heat to medium.
- Cook pasta with chicken: Add the cooked chicken back into the saucepan along with the dry pasta. Stir well to combine everything. Cover the pan and let simmer for 10-15 minutes or until the pasta is tender to your liking, stirring occasionally to prevent sticking.
- Add cheeses and serve: Stir in 1/4 cup of mozzarella cheese and the 1/2 cup of Parmesan cheese until melted and creamy. Then mix in the remaining 1/2 cup of mozzarella cheese. Garnish with dried parsley and serve immediately while hot.

- You can substitute chicken breasts for thighs if preferred.
