Description

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 1/2 cups finely chopped broccoli florets
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup heavy cream or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese


Instructions

  1. In a large skillet or saucepan, heat olive oil and butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Stir in the dry orzo and toast for 2–3 minutes, stirring often. Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 8–10 minutes, stirring occasionally, until most of the liquid is absorbed and the orzo is nearly tender.
  3. Add chopped broccoli, salt, pepper, and paprika (if using). Stir and cook uncovered for 3–4 more minutes until the broccoli is tender.
  4. Stir in the heavy cream, cheddar cheese, and Parmesan. Mix until the cheese is melted and everything is creamy and well combined. Remove from heat and let sit for 2–3 minutes before serving.

Notes

  • For a heartier version, stir in cooked chicken or serve as a side with grilled meats.
  • Use frozen broccoli if needed—just thaw and drain before adding.
