Ingredients

Pasta and Broth

  • 12 oz spaghetti or linguine
  • 4 cups vegetable broth or water

Herbs and Seasonings

  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Finishing Touches

  • 1/2 cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley
  • Juice of 1/2 lemon


Instructions

  1. Sauté Garlic: In a large deep skillet or sauté pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant and slightly golden, being careful not to burn it.
  2. Add Pasta and Liquids: Add the uncooked spaghetti or linguine to the skillet, followed by the vegetable broth or water. Stir in the dried oregano, dried basil, thyme, red pepper flakes (if using), salt, and black pepper, mixing everything well.
  3. Bring to Boil and Simmer: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook uncovered for 10–12 minutes. Stir occasionally to prevent the pasta from sticking and to help it cook evenly. Cook until the pasta is al dente and most of the liquid has been absorbed.
  4. Finish with Cheese and Herbs: Remove the pan from heat and stir in the grated Parmesan cheese if using, then add the fresh lemon juice and chopped parsley. Mix thoroughly to combine the flavors.
  5. Serve: Serve the pasta immediately, garnished with extra fresh herbs or additional Parmesan cheese if desired.
