Ingredients
For the Chicken:
- 1 pound boneless skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowl:
- 1 cup long grain white rice
- 1 1/2 cups chicken broth
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 (10 oz) can diced tomatoes with green chiles
- 1 cup shredded cheddar or Mexican blend cheese
- juice of 1 lime
- fresh cilantro for garnish
Instructions
- Prepare the Chicken: Heat olive oil in a large skillet, add diced chicken, and season with spices. Cook until browned.
- Cook the Bowl: Stir in rice, broth, beans, corn, and tomatoes. Simmer until rice is tender.
