Description

This One-Pan Chicken and Sweet Potato Skillet is a delicious and easy weeknight meal that is both healthy and flavorful. Tender chicken, sweet potatoes, and colorful vegetables come together in a skillet for a satisfying dinner that’s ready in no time.


Ingredients

Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces

Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and diced

Vegetables:

  • 1 small red onion, chopped
  • 1 red bell pepper, chopped

Seasonings:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste

Garnish:

  • 2 tablespoons chopped fresh parsley for garnish (optional)

Instructions

  1. Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt, pepper, and half of the smoked paprika, and cook for about 5–6 minutes until golden and cooked through. Remove the chicken from the skillet and set aside.
  2. Cook Vegetables: In the same skillet, add the remaining tablespoon of olive oil along with the sweet potatoes. Cook for 8–10 minutes, stirring occasionally, until they start to soften. Add the onion, bell pepper, garlic, cumin, thyme, and the rest of the paprika. Continue cooking for another 5–6 minutes until the vegetables are tender.
  3. Combine and Serve: Return the chicken to the skillet and toss everything together. Cook for an additional 2–3 minutes to heat through. Garnish with chopped parsley and serve warm.

Notes

  • For extra flavor, squeeze a bit of fresh lime juice over the top before serving.
  • You can substitute boneless chicken thighs or add spinach in the last few minutes of cooking for extra greens.
