- Prepare the dough: Place the mashed potato in a large mixing bowl. Stir in the vanilla extract. Gradually add powdered sugar, one cup at a time, stirring well after each addition. The mixture will initially be runny but will thicken into a pliable dough as you add more sugar.
- Roll out the dough: Dust a clean work surface with powdered sugar, then roll the dough into a rectangle about 1/4 inch thick, ensuring an even thickness throughout.
