Description

Old-Fashioned Potato Candy is a nostalgic American treat featuring a smooth mashed potato dough blended with powdered sugar and vanilla, then spread with creamy peanut butter and rolled into sweet, bite-sized pinwheels. This no-bake candy offers a unique texture and rich flavor, perfect for a vintage dessert lover seeking an easy homemade confection.

Ingredients

Potato Dough

  • 1 small russet potato (about 1/2 cup mashed)
  • 46 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Filling

  • 1/2 cup creamy peanut butter

Instructions

  1. Boil and mash potatoes: Peel, dice, and boil the potato until fork-tender, about 10–15 minutes. Drain thoroughly and mash until smooth with no lumps. Let it cool slightly before use.
  2. Prepare the dough: Place the mashed potato in a large mixing bowl. Stir in the vanilla extract. Gradually add powdered sugar, one cup at a time, stirring well after each addition. The mixture will initially be runny but will thicken into a pliable dough as you add more sugar.
  3. Roll out the dough: Dust a clean work surface with powdered sugar, then roll the dough into a rectangle about 1/4 inch thick, ensuring an even thickness throughout.
  4. Spread peanut butter: Evenly spread the creamy peanut butter over the entire surface of the rolled-out dough.
  5. Roll and chill: Carefully roll the dough tightly starting from one long side into a log shape. Wrap the log in plastic wrap and refrigerate for at least 1 hour to firm up the candy.
  6. Slice and serve: Once chilled, unwrap the log and slice into 1/4-inch rounds. Serve immediately or store in an airtight container in the refrigerator.

Notes

  • Use just enough powdered sugar to form a soft but rollable dough.
  • This vintage treat is very sweet; thin slices go a long way.
  • Store leftover candy in an airtight container in the refrigerator for up to 1 week.
