Description

Golden, crispy corn fritters bursting with the sweetness of corn and a fluffy, savory batter—perfect for brunch, appetizers, or a cozy side dish.


Ingredients

  • 1 1/2 cups corn kernels (fresh, canned, or frozen and drained)
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 1/4 cup milk
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Butter or oil for frying
  • Optional: 2 scallions, chopped
  • Optional: 1/4 cup shredded cheddar cheese
  • Optional: pinch of paprika


Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, pepper, and sugar.
  2. In another bowl, lightly beat the eggs and mix in the milk.
  3. Combine wet and dry ingredients to form a thick batter—do not overmix.
  4. Fold in corn and any optional extras like scallions, cheese, or paprika.
  5. Heat a skillet over medium heat and add enough oil or butter to coat the pan.
  6. Drop spoonfuls of batter into the hot pan and flatten slightly.
  7. Cook 2–3 minutes per side, until golden brown and puffed.
  8. Transfer to paper towels to drain. Serve hot or keep warm in a low oven.

Notes

  • Garnish with fresh herbs, sour cream, honey, or a drizzle of maple syrup for extra flair.
  • Serve with salads, eggs, barbecue, or spicy sauces like remoulade.
  • To make gluten-free, substitute with a GF flour blend and ensure all other ingredients are GF.
