Ingredients
- 1 1/2 cups corn kernels (fresh, canned, or frozen and drained)
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 2 large eggs
- 1/4 cup milk
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- Butter or oil for frying
- Optional: 2 scallions, chopped
- Optional: 1/4 cup shredded cheddar cheese
- Optional: pinch of paprika
Instructions
- In a large bowl, whisk together flour, baking powder, salt, pepper, and sugar.
- In another bowl, lightly beat the eggs and mix in the milk.
- Combine wet and dry ingredients to form a thick batter—do not overmix.
- Fold in corn and any optional extras like scallions, cheese, or paprika.
- Heat a skillet over medium heat and add enough oil or butter to coat the pan.
- Drop spoonfuls of batter into the hot pan and flatten slightly.
- Cook 2–3 minutes per side, until golden brown and puffed.
- Transfer to paper towels to drain. Serve hot or keep warm in a low oven.
