Instructions

  3. Heat the skillet: Place a cast iron skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil. Allow the pan to become hot before cooking the burgers.
  4. Form and smash the burgers: Place one beef ball on the hot skillet and pile a generous amount of the thin onion slices on top. Using a sturdy spatula, press down firmly to smash the beef and onions into a thin patty, pressing the onions into the meat.
  5. Season and cook first side: Season the smashed burger with kosher salt and black pepper. Cook for 2-3 minutes without moving, allowing the edges to get crisp and brown.
