Ingredients
Cookie Dough:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 cups old-fashioned rolled oats
- 1 cup chopped dried apricots
- 3/4 cup white chocolate chips
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Mix the dough: Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats, dried apricots, and white chocolate chips.
- Bake: Scoop dough onto the prepared baking sheet and bake for 10–12 minutes until golden brown. Cool on a wire rack.
Notes
- For chewier cookies, slightly underbake them.
