Description

This No-Peek Chicken Casserole is a comforting and easy-to-make dish that combines tender chicken, creamy soups, and flavorful rice all baked together for a delicious one-pan meal.


Ingredients

For the casserole:

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)

For the soup mixture:

  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of celery soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 1/2 cups water or chicken broth
  • 1 envelope onion soup mix
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the casserole: Spread the uncooked rice in the baking dish. Mix together the cream of mushroom, celery, and chicken soups with water or broth, then pour over the rice. Season the chicken and place on top of the rice mixture.
  3. Season and bake: Sprinkle with onion soup mix, cover tightly with foil, and bake for 1 hour and 45 minutes. Rest before serving.
